Grass-fed beef for sale

A year and a half after starting our beef herd, we have finally sent our first five animals to a little butcher with the reputation of being arguably the best in eastern Ontario. We are offering on first-come basis orders for beef halves and mixed quarters (or 'half of a half' including meat from both hind and front quarters) which will be ready for delivery from mid November -- or can alternatively be stored at our farm for delivery in five stages over the winter.

The beef is being slowly dry-aged for 21 days, which foodies will know is an extremely rare luxury in this day and age. This adds to the pasture-finished flavour and texture. We will also have grass-fed lean hamburger, soup bones, stewing beef, ground beef as well as organ meats and delicacies for those who enjoy them.

Here are the main prices:

* Halves and mixed quarters -- an equal mixture of the front and hind quarters from our non-certified organic and pasture-raised and -finished cattle -- are $9.25/pound actual weight (this works out to less than $6/pound of hanging weight) if the entire order is delivered all at once. If you would like the order delivered in five portions between November and March, the cost will be $9.90/pound actual weight. A mixed quarter will probably total between 75 and 100 pounds, depending on the animal. We won't know the exact actual weight until the cuts are done, and won't charge you until we have exact numbers.

* Ground beef is separately available for a discounted $9.50/pound actual weight (sold individually) or $8.50/lb when purchasing 25 pounds or more at once. This is sold at a discounted price because it is from a healthy animal that was raised organically on grass and hay for its entire life and which received a single antibiotic treatment for a foot injury earlier this year.

* We also have beef sausages for a discounted $10.00 per pound made from the same healthy grass-fed cow that received a single antibiotic treatment during its lifetime. The sausages are prepared by our butcher with a mixture of natural (non-organic) herbs and spices. No sulphates, nitrates or chemicals are added. The sausages are made in 25 pound packs (if you or we can find customers to share packages, these can be divided). Below are the sausage types:

  • honey garlic (gluten free)
  • mild Italian (gluten free)
  • hot Italian (gluten free)
  • maple garlic (gluten free)
  • farmer or country breakfast style
  • Octoberfest
